This tender and delicate cheese with a unique texture is produced with a short maturation of mixed milk from which a sweet and full-bodied curd (typical of sheep’s milk) is obtained. Softened using cow’s milk, its short maturation in a ventilated environment is carried out. The crust is soft and dry, while the paste develops aromas of milk and melted butter.
This is a pre-order cheese and waiting period to receive it is approximately 2 weeks.
